A Chef Instructors Story!

Catering Training Wing (CTW)

“I find myself standing at the front of the kitchen at Catering Training Wing, Worthy Down; however, this time I have a course of ten enthusiastic Royal Air force students smiling back at me.

It is Day 1 of their 9-week course, and I can feel the hum of anticipation from my students as I introduce the first practical lesson and discuss Food Safety where I demonstrate proper hand washing, explain cross-contamination with a raw chicken breast in one hand and a knife in the other.

I watch their faces shift from curiosity to understanding. This is where they start to see food safety not as a chore but as the backbone of professional cooking. I tell them this course isn’t just about achieving a pass - it’s about learning the foundations of a skill they will have throughout their career, and even life.

This what I love about my job, working with motivated young Service men and women from all three Services who are hungry to learn their trade and seeing them develop over the duration of the course. I share stories from my own time working in a busy kitchen, the near misses, the lessons learned the hard way, and the pride of running a spotless kitchen even on the busiest day; I feel honoured to start them on that journey. Aside from this, I love the interaction with the other military instructors, understanding their requirement for operational Chefs but also the time the MOD allows for my professional development, it really is a great and rewarding place to work.
